Consider installing MythTV. It has lots of features tahat you won't need (it's geared towards TV viewing/recording), but is pretty popular for making a Linux media PC. The MythBuntu distro will have MythTV preconfigured so you just have to install it.

If that's not your cup of tea, look at the programs XBMC, Boxee, or Elisa. You can install these on top of Ubuntu and configure Ubuntu to automatically run them on boot.
