One thing you could consider doing is some linux demo stuff.

Usually the LUG does that - they bring out a few laptops and demo things
like compiz, etc.

But perhaps you can bring a few 22" monitors (basically, have a big
noticable screen with a wide viewing angle) and have someone continuously
spinning a compiz cube, showing off the cool screensavers, or demoing
other nifty software (vuze, rhythmboxes, gcc, whatever you think is cool)

You could even have ubuntu cds available (And put labels on them, or
printing on them: "Free Linux, paid for by the NCSU LUG" or something
cute). Or maybe signups for a "LUGger to come to your home, bring pizza,
and install linux on your computer absolutely free!" (use wubi or
something.)

Just a few thoughts - basically, make it glitzy! cute! humorous!
