Quick tip if you use Gmail: Gmail has an " Undo Send" feature in Labs. Click the green flask/vial in the topright corner , enable Undo Send about 3/4 down the page, then in Settings>General, customize your "Send cancellation period". When you send an email, Gmail's servers hold it for that many seconds before actually sending so that you can click an "Undo" link at the top of the page if you realize you just made a mistake, and it will return you to the compose mail screen to modify your message and resend it.

I use it quite often when I accidentally send a mail from my Gmail account rather than my school address, and don't realize it until just after I click the send button.
